This Charlies Layered Mexican Casserole is too delicious! We used fresh garlic and chili and we added a chopped red pepper - all growing in our garden in abundance! The tortillas and salsa were both made by a Mexican friend. In this dish you can basically use whatever you have available and it will still be really good!

Yum! This is really nice, and you won't ever miss the enchilada sauce. I love the use of the halved cherry tomatoes, which are a nice compliment to the salsa. Speaking of the salsa, we've had a black bean and corn salsa before and plan on including some the next time we make this. I like using the combination of both corn and flour tortillas in this and I want to try some blue corn tortillas as well. Instead of the shredded mozzarella, we used some shredded Mexican cheese we had.

I've made a lot of Mexican casseroles similar to this and they are always good. Definitely adding this to my to-do list.
