Something to note - this recipe uses chicken thighs, but you could use chicken breasts if you prefer. Ingredients

  • 1 pound boneless, skinless chicken thighs, chopped
  • 2 cups brown rice
  • 2 cups broccoli (fresh or frozen)
  • 1 medium yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 (14-ounce) can cream of celery or mushroom soup
  • 1 cup shredded sharp Cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat the oven on 350 degrees F.

  2. Cook the rice. 

  3. Meanwhile, pour the olive oil into a large pan and place the pan over medium high heat. Once the oil heats up, add the onions and cook them until they start to sweat.

  4. Next, add the chicken. Sprinkle with salt and pepper. Cook the chicken until it is fully cooked, then add in the broccoli and then the rice.

  5. Turn the heat off, and remove the pan from the burner. Transfer the ingredients to a casserole dish.

  6. Add the cream of mushroom/celery soup, and fold in. Add 1/2 cup of cheese. Fold in all of the ingredients, and make sure everything is well incorporated. Top the casserole with the remaining cheese. 

  7. Bake uncovered for 15 to 20 minutes.
