Mashed Cauliflower Paleo Shepherds Pie

Ingredients

  • 2 (16-ounce) bags frozen cauliflower florets
  • 2 teaspoon minced garlic
  • 3 tablespoon coconut oil
  • 3/4 cup coconut milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoon plus 2 teaspoons dried chives
  • 2 tablespoon olive oil
  • 1 onion, diced
  • 2 cup diced carrots
  • 1 teaspoon minced garlic
  • 1 (14-1/2-ounce) can fire-roasted diced tomatoes
  • 2 teaspoon garlic salt
  • 3 pound ground turkey
  • 2 teaspoon smoked paprika
  • 2 teaspoon cumin
  • 4 ounce tomato paste

Instructions

  1. Prepare the mashed cauliflower topping. Cook the cauliflower according to package directions. Drain and pour into a food processor. Puree the cauliflower until smooth.

  2. In a small saucepan cook the garlic, coconut oil, coconut milk, salt and pepper for 1-2 minutes.

  3. Add the coconut mixture and 1 tablespoon of chives to the pureed cauliflower and pulse for 10-15 seconds. After tasting add more salt and pepper if needed. Set aside.

  4. In a large skillet heat the olive oil over medium high heat. Add the onion and carrots and cook until soft about 5 minutes. Add the garlic and cook for another minute.

  5. Add the tomatoes, garlic salt and cook for 2 more minutes.

  6. Add the ground turkey, paprika, cumin and tomato paste. Cook until the ground turkey is cooked and browned.

  7. Heat oven to 350. Lightly spray a 9 x 13-inch baking dish with cooking spray.

  8. Pour the turkey mixture into the baking dish. Spread the mashed cauliflower mixture over the turkey mixture. Sprinkle with remaining chives.

  9. Bake at 350 degrees F until top is golden brown.
