Potatoes are a versatile and budget-friendly ingredient that can easily be transformed into a show-stopping dish. This easy casserole recipe for Cheesy Scalloped Potatoes is a cinch to make, and your pocketbook will be thanking you once you realize how affordable it is to throw this casserole together. To make this scalloped potatoes recipe, a creamy sauce is made from a combination of onion, herbs, butter, and milk. Sliced potatoes are then layered with the sauce, shredded cheese, and diced ham. The rich and creamy casserole is then baked until it is golden brown and bubbly.

Serves6

Ingredients

  • 1 tablespoon onion
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup butter
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 2 cups milk
  • Salt and pepper
  • 6 large potatoes, such as russet or Yukon gold, sliced
  • 3/4 cup shredded Cheddar cheese
  • 1/4 cup diced gluten-free ham

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 2-quart shallow baking dish. Set aside.

  2. For the Sauce: In a medium saucepan, cook the onion, chives, and parsley in the butter until tender. In a small bowl, mix the water and cornstarch; stir into the onion mixture. Gradually stir in the milk. Cook and stir on medium heat until thickened. Cook for 1 more minute. Add salt and pepper to taste.

  3. Alternately layer the potatoes, cheese, ham, and sauce in the prepared baking dish. Cover with foil and bake for 30 minutes. Uncover and bake for 1 hour more.
