It only takes six ingredients to make this Sinfully Easy Baked Pierogi Casserole. Frozen pierogi are topped with a creamy sauce made from cream cheese and chicken stock. The casserole is then topped with Cheddar cheese and crispy bacon bits. After the casserole has baked until it is hot and bubbly, the pierogi are sprinkled with fresh green onions. This crowd-pleasing casserole will remind you of your favorite loaded baked potato casserole. This easy pierogi casserole recipe makes for a very rich and filling main dish. Because this casserole is so decadent, it would also make a great side dish for chicken or steak. The best thing about this pierogi casserole is that it can be made with any flavor of frozen pierogi, so you can always make it with your favorite flavor, or you can mix it up by making it with a different variety of pierogi every time.

These may be made with your favorite pierogi flavor (potato, cheese, meat, or sauerkraut). If using sauerkraut, you might add chopped, cook kielbasa sausage instead of bacon.

Ingredients

  • 1 (16-ounce) package of frozen pierogies, onion/potato flavor or your favorite
  • 1/2 cup cream cheese
  • 1/2 cup chicken broth or milk
  • 1/2 cup shredded Cheddar cheese
  • 2 - 3 slices of bacon, cooked and chopped
  • 2 green onions, chopped for garnish

Instructions

  1. Preheat the oven to 400 degrees F. Spray a 9 x 13 baking dish with vegetable spray.

  2. Combine the cream cheese and broth or milk in a small saucepan over medium heat. Stir with a whisk until very smooth.

  3. Arrange pierogies in a single layer in the baking dish and pour the cream cheese mixture over them.

  4. Sprinkle the pierogies with cheese, and then the bacon. Bake for about 25 minutes, or until the cheese is melted and the pierogies are warmed through. Sprinkle the green onions over the top to garnish before serving.

After thawing the pierogi, do you cook them before putting them into the baking dish, or do you put them in raw?
