I never really thought about using my slow cooker for a breakfast dish like this, but I definitely want to give it a try. I am not much of a morning person, and this would be fabulous to whip together on a Friday night for a lazy Saturday morning treat. For even less prep work and fat, you could even add some diced ham cubes in place of the sausage.
