Momma's Baked Brisket

Momma's Baked Brisket is a beef casserole recipe that can be made with just five ingredients! This dinner has homemade taste and old-fashioned flavors. It's made with beef brisket, carrots, onions, and an easy made-from-scratch gravy. Prep time is super low on this recipe and you can sit back and relax while this slowly cooks in the oven. That's why this hearty dish would be a good choice for a lazy weekend dinner. It's satisfying and simple at the same time. Everyone at your table will love this dish.

Notes

If cooking for more people, make another brisket about the same size in another pan and double the ingredients instead of getting a larger cut of meat. For easy clean-up, use a large and deep disposable aluminum pan.

Serves4

Ingredients

  • 1 4 to 5 pound brisket
  • 6 carrots, peeled and kept whole
  • 1 small onion sliced (optional)
  • 1 packet onion soup mix
  • 1 can jelled cranberries
  • 1 1/2 cup beef broth
  • 2 tablespoons brown sugar (optional)
  • 1/8 cup cold water (optional)
  • 2 tablespoons cornstarch (optional)

Instructions

  1. Preheat oven to 350 degrees F. Rinse the brisket in cold water and place in pan along with the carrots and onions, if using.

  2. In a glass bowl, mix the soup mix, cranberries, and beef broth. Add brown sugar, if desired.

  3. Pour mixture over the brisket, carrots, and onions. Cover tightly with tin foil and bake for about 2 hours.

  4. Take out and mix the sauce around and over the brisket. If the liquid is not thick like a gravy, take a measuring cup and add the cold water and whisk in the cornstarch. Pour around the liquid in the pan and whisk it in so you don't see white from the cornstarch. Place back in the oven for another 15 minutes until the liquid boils.

  5. Take out of the oven, uncover, and let the brisket sit about 10 minutes. A properly-cooked brisket should look like it's going to fall apart. Slice up and serve with potatoes or rice.
