This Roasted Vegetables and Chickpeas side dish is a satisfying blend of vegetables in a light, flavorful sauce. At its core, this is a very unique potato casserole recipe. It has Russet potatoes and sweet potatoes, along with carrots, onions, garlic, and chickpeas. Tossed in an olive oil and herb sauce, these veggies are ready to go into the oven.
