"Enchiladas just became infinitely better. Braised short ribs prepared either in the instant pot for ease or in the oven are the star of this dish, taking enchiladas to the next level. Use the braising liquid as the sauce, top the tortillas with plenty of cheese and bake the enchiladas until the cheese is nice and gooey. Garnish with fresh avocado, radish, cilantro, and a squeeze of lime and you have the ultimate Mexican casserole dinner!"
