Barbeque Beef Lasagna

Ingredients

  • 1 pound ground beef
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon lemon pepper seasoning
  • 1 medium onion, divided in half and chopped
  • 1 medium green pepper, chopped
  • 1 garlic clove, minced
  • 1 tablespoon oil
  • 1 cup ketchup
  • 1/2 cup packed brown sugar
  • 1/4 cup lemon juice
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 no-boil lasagna noodles
  • 2 cup shredded Cheddar cheese
  • 1 cup cottage cheese
  • 1 egg

Instructions

  1. Sauté beef with chili powder and lemon pepper seasoning. Add onion, green pepper, and garlic with the tablespoon of oil.

  2. In a separate pot combine brown sugar, lemon juice, vinegar, Worcestershire sauce, mustard, salt, and pepper.

  3. In a small bowl combine Cheddar, cottage cheese, and egg.

  4. Once meat is cooked and sauce has come together, remove from burner and combine the meat with the sauce.

  5. In a 9 x 13-inch baking dish, place a small amount of meat sauce on the bottom. Top with no-boil lasagna noodles. Add cheese, and top with meat sauce. Repeat and layer three times (noodle, then cheese, then meat sauce).

  6. Bake at 375 degrees F for 35 minutes.
