If you like tacos and breakfast foods, you can combine the two together with this easy Migas Casserole recipe. This traditional Tex-Mex dish combines crunchy tortilla chips, melted Monterey Jack cheese and scrambled eggs to create a warm, hearty meal. The spicy jalapenos and Mexican chorizo add that extra zip and flavor we love so much about Tex-Mex cuisine. It serves a lot of people and doesn't take very long to make, so this is a great breakfast to whip up quickly if you are hosting overnight guests.
