Ingredients

  • 3 chicken breasts, sliced in half
  • 1 (14-ounce) can of black beans, drained and rinsed
  • 1 (14-ounce) can diced tomatoes, drained
  • 1 1/2 cup fresh or thawed frozen corn
  • 1 poblano pepper, seeded and chopped
  • 2 tablespoon flour
  • 1 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat oven to 375 degrees F.

  2. Spray a 9 X 13 inch baking dish with non-stick cooking spray.

  3. Combine beans, tomato, corn, chopped poblano, flour, chili powder, cumin, salt, and pepper.

  4. Pour into prepared baking dish.

  5. Top with chicken breasts.

  6. Bake for 35 to 40 minutes or until the chicken is cooked through.

  7. Top with grated cheese if desired.
