Soda Bread Pudding

Soda Bread Pudding is an original recipe from Uptown Soda Bread Company. You can use their Chocolate Chip, Cranberry Walnut, or Raisin soda bread in this recipe. It tastes better with stale bread, so chop it into small pieces and leave it out until it gets a little hard.

Ingredients

  • 1 medium soda bread, a little stale, cubed
  • 4 tablespoon butter, melted
  • 4 eggs
  • 2 cup heavy cream
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon vanilla extract

Instructions

  1. Lightly grease a 9 x 9 inch baking dish.

  2. Place the cubed, stale soda bread in a mixing bowl. Drizzle the melted butter on the bread and mix in lightly.

  3. In another mixing bowl combine eggs, cream, brown sugar, cinnamon, and vanilla. Mix thoroughly.

  4. Place bread in prepared baking dish. Pour liquid mixture on top and allow it to saturate the bread pieces. Let set for 30 to 60 minutes.

  5. Preheat oven to 350 degrees F.

  6. Bake for 1 hour. Check it after 50 minutes. If needed, protect the edges from burning by covering with foil.

  7. Serve warm with sauce of your choice, like a bourbon creme or vanilla sauce.
