Layered Vegetable Gratin has three layers of eggplant, zucchini, and tomatoes, which are covered by a most delicious crust. The crispy Parmesan topping has a hint of garlic flavor and turns golden-brown in the oven. It adds the perfect finishing touch to this dish.
