Spoon bread is always a hit at our house. This is a good basic recipe. I add other ingredients for variety breads. Diced ham, bacon crumbles, very thinly sliced onion, finely chopped hot and/or sweet peppers, chopped mushrooms -- a good way to use stems if you stuff the caps -- browned sausage, all kinds of flavorful ingredients can be added. The best thing about this recipe is that it relies on natural rising from the buttermilk and soda, so it will always be tender and flavorful.
