Notes

Fresh broccoli should be blanched. To do this, cut the broccoli into small pieces and place into a large pot of boiling water for 2 minutes until it is bright green and just beginning to cook. Drop into a bowl if ice water until cool to the touch. Dry well on paper towels to remove any excess moisture.

 



You may use frozen broccoli. Simply place into a colander and run water over it to thaw, then dry well on paper towels to remove any excess moisture.

Ingredients

  • For the crust:
  • 1 cup brown rice, cooked according to the package directions and cooled
  • 1/4 cup finely grated Cheddar cheese
  • 1/4 cup finely grated Parmesan cheese
  • 1 egg
  •  
  • For the filling:
  • 2 cups broccoli florets (see note)
  • 1 cup grated Cheddar cheese
  • 1/4 cup sliced green onions
  • 4 eggs, well beaten
  • pinch of ground nutmeg
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 450 degrees F.

  2. To make the crust, stir the rice, cheeses, and egg together. Press into the bottom and up the sides of a 9-inch pie plate to 1/4-inch thickness. Bake for about 7 minutes. The crust will just begin to brown.

  3. Meanwhile, prepare all of the filling ingredients and beat the eggs with the nutmeg, salt, and pepper.

  4. When the crust is baked, lower the oven temperature to 375 degrees F.

  5. In the bottom of the crust, layer the broccoli, cheese, and onions. Pour the eggs over the vegetables and bake for 35 to 40 minutes until the eggs are firm and the top is golden brown.

  6. The quiche may be served immediately or at room temperature.
