I know I will make this shepherd's pie. It is such an easy recipe, and a just the right size recipe for a small family. I am always looking for recipes with a small list of ingredients. I used to cook more complicated meals, but then I found I had a lot of leftover ingredients that I never used again. Wasteful! I think you could add peas and carrots instead of corn.

I love this idea! I always have mashed potatoes left over. I can't seem to make a little pot of homemade potatoes when I make them, I always make a five pound batch of mashed potatoes. This recipe is an excellent option for that. I like the traditional use of peas and carrots in shepard's pie, but the corn is a nice way to mix it up. Who doesn't love a casserole covered in ooey gooey cheese? I know this will be a hit in my house.
