Seriously? You use a "Martha Washington" recipe to characterize Washington State cuisine? Try a recipe involving grilled salmon - that would be more representative of Washington State than a "Martha Washington casserole". Really?

What about TEX mex says Arizona? lame.

The idea of including an eggplant recipe made with tofu is not representative of Louisiana.
