Breakfast Shepherd's Pie

Shepherd's pie recipes are typically dinner meals, but not always. Breakfast Shepherd's Pie uses hearty bacon, eggs, red bell pepper, and other wholesome ingredients to make a wonderful breakfast casserole. Simply Potatoes Diced Potatoes with Onion top off the dish, which adds to the "shepherd's pie" feel.

Ingredients

  • 6 cups Simply Potatoes Diced Potatoes with Onion
  • 6 slices bacon
  • 6 eggs
  • 1 cup red bell pepper, diced
  • 1/4 cup Feta cheese
  • 1 cup Cheddar cheese, shredded
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon paprika
  • 1/4 cup jalapenos (optional)
  • 1 tablespoon onion powder
  • 2 cans corned beef hash
  • 2 tablespoons olive oil, divided
  • 1 clove garlic
  • 1/4 green onion, chopped

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a skillet, cook 6 slices of bacon until crisp, drain on paper towel.

  3. Drizzle olive oil in skillet, heat, and cook diced green onion and clove of chopped garlic.

  4. Mix 6 eggs in a bowl, add salt and pepper to taste.

  5. Add crumbled feta. Crumble the six slices of cooked bacon and add to bowl. Add cooked green onion and garlic. Stir. Pour into an 8 x 8 inch casserole dish. Bake egg mixture for 20 to 25 minutes.

  6. Heat olive oil in large skillet. Cook Simply Potatoes Diced Potatoes. Add chopped red pepper. Add jalapeos if desired. Add salt and pepper to taste. Add paprika and onion powder. Mix all ingredients in skillet until potatoes are cooked.

  7. Cook 2 cans of corned beef hash in another pan. When egg mixture is finished baking, remove from oven and spread the cooked corned beef hash on top of eggs. Spread potato mixture on top of hash. Cover the top of potatoes with shredded Cheddar cheese. Return casserole to oven for 5 to 10 minutes or until cheese is melted.

I haven't prepared this yet, but in writing the recipe on a card, I came across a discrepancy. In the #3 instructions, it reads thus: Drizzle olive oil in skillet, heat and cook diced green onion and clove of garlic. I think you accidently omitted the green onion. How much diced green onion do I need?
